Vanilla Chai Pudding (Vegan)

Ingredients: 

  • 3 tablespoons chia seeds
  • 1 cup almond milk, unsweetened
  • 1 teaspoon vanilla extract
  • 1 tablespoon pure maple syrup
  • lemon zest, to taste

Directions: 

  1. Combine all of the ingredients in a blender, and blend until a uniform texture is achieved.
  2. Transfer to a sealed container and allow to chill overnight.

Notes:

Serve with a sliced banana and a dash of cinnamon, if desired.
