Sweet Potato and Sausage Hash

Cook time: 15 minutes

Yields: 4-6 people

Difficulty:  medium

Ingredients: 

  • Tbl cooking fat (grass fed butter, bacon fat or olive oil)
  • 1 pound bulk sausage (i get breakfast sausage, basil sausage or spicy sausage, and chicken or pork are both great)
  • 2 medium to large sweet potatoes or yams (I like the orange-fleshed kind)
  • For garnish:!
    • cilantro leaves (so good for you!)
    • sliced avocado
    • hot sauce

Directions: 

  1. Grate sweet potato with skin on with a food processor or hand grater.
  2. Heat cooking fat on medium-high heat in large sauté pan.
  3. When hot, add sweet potato and spread evenly. Cover pan, turning heat down to medium, so steam will soften the grated sweet potato evenly, about 5 mins.
  4. When potato has darkened and steamed a bit, lift lid and add sausage. Distribute evenly with a potato masher or wooden spoon.
  5. Once mixture is melded nicely, let it cook so it starts to brown, 5 -10 mins.
  6. Divide into quarters to flip in pan and brown on other side and cook for another 5 minutes or until nicely browned on both sides and meat fully cooked.
  7. Arrange on plates and garnish with fried or poached egg, avocado, cilantro, and tabasco.
