Sweet Potato and Sausage Hash

Yields: 4-6 people

Ingredients:
- 2 Tbl cooking fat (grass fed butter, bacon fat or olive oil)
- 1 pound bulk sausage (i get breakfast sausage, basil sausage or spicy sausage, and chicken or pork are both great)
- 2 medium to large sweet potatoes or yams (I like the orange-fleshed kind)
- For garnish:!
- cilantro leaves (so good for you!)
- sliced avocado
- hot sauce
Directions:
- Grate sweet potato with skin on with a food processor or hand grater.
- Heat cooking fat on medium-high heat in large sauté pan.
- When hot, add sweet potato and spread evenly. Cover pan, turning heat down to medium, so steam will soften the grated sweet potato evenly, about 5 mins.
- When potato has darkened and steamed a bit, lift lid and add sausage. Distribute evenly with a potato masher or wooden spoon.
- Once mixture is melded nicely, let it cook so it starts to brown, 5 -10 mins.
- Divide into quarters to flip in pan and brown on other side and cook for another 5 minutes or until nicely browned on both sides and meat fully cooked.
- Arrange on plates and garnish with fried or poached egg, avocado, cilantro, and tabasco.
