Quinoa Breakfast Porridge
Yields: 3-4 people
Difficulty: easy!
Ingredients:
- 1 cup quinoa
- 2.5 cups water
- 1/4 - 1/2 cup milk (any type--i prefer coconut)
- 1 tsp grass fed butter or ghee
- 1 tsp tumeric
- 1 Tbl cinnamon
- 1 Tbl real maple syrup
- stir in (if on hand):
- 1 Tbl sliced raw almonds, walnuts or pecans
- 1 Tbl pumpkin seeds
- 1 Tbl flax seeds
- 1 Tbl chia seeds
- 1 Tbl hemp hearts/seeds
Directions:
- Put water in an uncovered pot and bring to boil.
- Add quinoa, stirring occasionally until water is fully absorbed and quinoa is very soft, roughly 10-20 minutes.
- Stir in milk, ghee or butter, cinnamon and maple syrup. The consistency should be more like soup--you don't want it too thick.
Serve in bowls with nuts and seeds stirred in or sprinkled on top.
Notes:
Fresh berries are an excellent garnish!
