Quinoa Breakfast Porridge

Yields: 3-4 people

Difficulty:  easy!

Ingredients: 

  • 1 cup quinoa
  • 2.5 cups water
  • 1/4 - 1/2 cup milk (any type--i prefer coconut)
  • 1 tsp grass fed butter or ghee
  • 1 tsp tumeric
  • 1 Tbl cinnamon
  • 1 Tbl real maple syrup
  • stir in (if on hand):
    • 1 Tbl sliced raw almonds, walnuts or pecans
    • 1 Tbl pumpkin seeds
    • 1 Tbl flax seeds
    • 1 Tbl chia seeds
    • 1 Tbl hemp hearts/seeds

Directions: 

  1. Put water in an uncovered pot and bring to boil.
  2. Add quinoa, stirring occasionally until water is fully absorbed and quinoa is very soft, roughly 10-20 minutes.
  3. Stir in milk, ghee or butter, cinnamon and maple syrup. The consistency should be more like soup--you don't want it too thick.
  4. Serve in bowls with nuts and seeds stirred in or sprinkled on top.

Notes:

Fresh berries are an excellent garnish!
